 Ingredients:

- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon allspice (pimento) powder
- 1 cup flour (for dusting)
- Vegetable oil (for frying)

The Escovitch Sauce:

- 1 cup carrots, julienned
- 1 cup bell peppers (red, green, or yellow), sliced
- 1 medium onion, thinly sliced
- 2-3 Scotch bonnet peppers (whole, adjust to taste)
- 1 cup white vinegar
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon allspice (pimento) berries (optional)
- Fresh thyme (a few sprigs, optional)

 Instructions:

 Step 1: Prepare the Fish

1. **Clean the Fish**: Rinse the fish under cold water and pat dry with paper towels.
2. **Season**: Rub the fish inside and out with salt, black pepper, and allspice. Let it marinate for about 30 minutes.

Step 2: Fry the Fish

1. **Dust with Flour**: Lightly coat the fish with flour, shaking off any excess.
2. **Heat Oil**: In a large skillet, heat about 1/2 inch of vegetable oil over medium-high heat.
